Today is Two-fer day

Key Lime Pie

Sunday August 12th is Big Charlie's Birthday!  Molly and I are making one of his favorite desserts, Key Lime Pie.  I personally do not like sour/tart flavored desserts but Daddy and Molly both love them.  Since we are digging into the deeper side of the pastry arts, we are making it completely from scratch (except for the condensed milk, maybe next time).  
   
  Part 1: comes the Graham Cracker crust!  This recipe takes patience, strength and strong self control.  The dough takes multiple trips to the fridge and multiple muscles to roll it out.  After baking, I realized that it still wasn't thin enough, so I broke it into pieces at the score lines and placed it back into the oven to dry out and cracker up more.  These crackers are completely addicting and have a way jumping into your mouth. We will never buy store boxed graham crackers again!

Part 2: Key Lime filling.  There are a lot of similar variations of the custard-y filling, some use whole eggs others only use egg yolks.  The other main ingredients are Key Lime juice and condensed milk.
