Shhh... Don't Tell Molly

After doing some deep soul searching on my favorite blogs and Pinterest yesterday, I was overcome with the motivation to bake something pumpkin flavored (in my own kitchen, not Molly's).  So I found a relatively harmless recipe for Pumpkin Donuts then added my own touch. Here it is:

 Baked Pumpkin Donuts (makes about 12 donuts)

Ingredients:
Dry:
1 cup ap flour (or wheat white flour)
1 cup whole wheat pastry flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
-------------------------------
Wet:
1/4 cup butter softened
1/2 cup brown sugar
1 large egg
1/2 cup pureed pumpkin
1/3 cup milk (I use rice milk)
1/3 cup maple syrup

Preparation:
1.Preheat oven to 375 F. (Convection Oven 350 F 17 minutes)
2. Combine dry ingredients, whisk and set aside.
3. Cream together butter and sugar in separate bowl.
4. Add the egg, pumpkin and milk, mix.
5. Combine the dry with the wet.
6. Place batter into a gallon zip top bag, trim 1 of the bottom corners.
7. Pipe the batter into a greased donut pan.
8. Bake for about 15 minutes and allow to cool.

I added a few chocolate chips to two of the donuts and they were still okay, but I like them better plain.

Optional Icing:
1/2 cup powdered sugar
1/4 teaspoon cinnamon
1 tablespoon maple syrup (or milk)
Mix well then drizzle onto donuts!

I'm sure Molly will figure out my secret when she gets home from school, I hope she isn't mad that I baked without her. Molly likes to keep her signature recipes a Secret, but I don't mind sharing Mine. Enjoy!
